Now it’ s time to shake things up a bit. When you are bored of courgetti (though we admit the shape does lend itself to the procedure) try the nutty winteriness of butternut squash with this gorgeous Lucky Onion recipe. The perfect winter lunch.

Ingredients:
Butternut Squash – 300g
Pumpkin Seeds – 40g
Linseed – 20g
Dried Cranberries – 20g
Watercress – 60g
Sunflower Seeds – 60g
Radicchio Lettuce – 60g
Pistachio Kernels Peeled, Roasted and Crushed – 20g

Method:
Cut peeled squash on mandolin or spiraliser into spaghetti shape.

Carrot and Ginger Dressing

Ingredients:
Carrot Juice (grate and squeeze carrots through j- cloth) – 150ml
Ginger Juice – 10g (20g squeezed and grated)
Sesame Oil – 50ml
Extra Virgin Oil – 35ml
Fresh Lemon Juice – 20ml
Salt – 2g
Fresh Black Pepper
