Seasonal Seasonality: Christmas Pudding

(Serves 4)


25g peeled almonds chopped
110g shredded suet
1 small cooking apple chopped Š 50g self-raising flour
Zest of 1⁄2 orange
110g of white bread crumbs
ŠZest of 1⁄2 lemon
1 tsp of mixed spice
2 eggs
1⁄4 tsp of grated nutmeg
125ml of ale
Pinch of cinnamon
2 TBLS brandy
225g of dark brown sugar
2 T B L S rum
110g sultanas
25g peeled almonds chopped
110g currents
25g mixed candied peel (finely chopped)


Mix all the ingredients in a large bowl and leave over night.

Pack the mixture into a mould cover with grease proof paper and the tinfoil then steam till cooked (40mins per 500g).

Serve with Brandy and cinnamon custard.
