Dunkerton’s Cider Batter

~ Makes enough batter for 6 x 160g fish fillets ~


2 cups plain flour
1 tsp baking powder
1 bottle of Dunkerton’s black fox cider 1/4 tsp turmeric
Pinch of salt
Grind of black pepper


Preparing the batter;

  1. Combine flour, baking powder & turmeric together
  2. Gently whisk in cider until you have a thick batter smooth batter consistency (should be like soft whipped cream)
  3. Season with salt & pepper
  4. Rest in fridge for 10mins before using

To fry the fish;

  1. Quickly soak your fillet of fish in the prepared batter mix
  2. Then dip the fish into some plain flour
  3. Allow your fryer or pan to heat up to 175, then gently place your battered fish into the oil and allow to fry until golden brown on both sides
  4. Remove your fish from the Fryer/Pan and allow any excess oil to drain off before serving
